Wild Rice Soup
Yield: 6 servings
Ingredients

onion, chopped

butter
|
|

| 1/4 |
cup |
flour
|
|
|
| 4 |
cups |
chicken broth
|
|
|
| 1/2 |
cup |
cooked wild rice
|
|
|
| 1 |
cup |
half and half cream
|
|
|
| 1/4 |
cup |
sherry
|
|
|
|
|
chopped parsley
|
|
|
Directions:
In large saucepan, cook onion and mushrooms in butter until onion is transparent. Add flour and stir until blended. Add chicken broth and cook 8-10 minutes, stirring until smooth. Add rice, cream and sherry, heating through. Garnish with parsley and serve hot.
