Stuffed Peach Halves

Ingredients

medium peaches, peeled, halved and pit removed
|

lemon juice
|
|
|

tablespoons |
unsweetened flaked coconut, toasted
|
|
|

tablespoons |
raisins
|
|
|
| 1/2 |
teaspoon |
grated lemon rind
|
|
|
| 1/2 |
teaspoon |
ground cinnamon
|
|
|
| 2 |
tablespoons |
lowfat vanilla yogurt
|
|
|
| 2 |
teaspoons |
honey
|
|
|
| 1 |
teaspoon |
vanilla extract
|
|
|
Directions:
Coat peach halves with lemon juice and set aside.
Combine remaining ingredients; stir well. Spoon mixture into cavity of each peach half. Chill.
